Watermelon rinds
pickling salt
1 quart vinegar
8 C. sugar
4 cinnamon sticks
1 Tbsp. whole cloves (do not use ground)

Directions:
Directions:
1. Soak rinds in pickling salt all day or overnight. Drain and rinse. Cook rinds for 10 minutes in fresh water. Drain again.
2. Boil vinegar, sugar, cinnamon, and cloves. Add rinds after boiling and boil until rinds are transparent.
3. Seal in hot jars.
