3 T olive oil
1 T flou or 1 tsp Xanthum gum
1/4 c. chili powder
2-3 c vegetable boullion
10 oz. tomato paste
1 tsp oregano
1 tsp cumin
1 tsp onion powder

Heat oil, add flour to smooth with a wooden spoon. Cook 1 minute. Add chili powder and cook 30 seconds. Add stock, paste, seasonings & salt to taste. Bring to simmer, and cook on low 15 minutes.

I stole this recipe from Emeril Legasse. It is far superior to any canned red enchilda sauce.
