Ingredients:  
Ingredients:  

Boneless, Skinless chicken, cut into chunks
Cooking Oil (1/8 cup or so)
Onion, diced
Garlic (4 to 6 cloves), minced
Chicken Broth (I use two big boxes)
Diced Tomatoes ( I use can of fire roasted diced tomatoes spiced for salsa)
Carrots, chopped up ( I use shredded carrots and cut them up)
Black beans, one can, rinsed
Jalapeno, minced
Cooked Rice, one cup
Zucchini
Yellow Squash
Cumin Spice
Cilantro, chopped
Lime, juice it

Directions:
Directions:
Cook chicken in a little oil
Add Onion, Garlic, Broth, Diced tomatoes, Carrots, Black Beans, and Jalapeno.
Bring to boil.
Add chopped Zucchini, Squash, Rice, cumin spice and simmer until veggies get softer.
Add chopped Cilantro and the juice of a lime.
Serve with Tortilla chips, shredded cheese and I add avocado to the bowl.
