Gerrie's Rhubarb Dessert Recipe

1 C. butter
2 C. plus 1 Tbsp. sugar
2 C. plus 4 Tbsp. flour
6 egg yolks (save yolks for meringue)
1 C. evaporated milk
⅛ tsp. salt
5 C. rhubarb

Meringue Topping:
6 egg yolks
C. sugar
2 tsp. vanilla
1 C. coconut

1. Mix together 1 cup butter, 1 tablespoon sugar, and 2 cups flour. Pat into 9x13 pan and bake at 350 for 10-15 minutes.
2. Mix together eggs, 2 cups sugar, 4 tablespoons flour, evaporated milk, salt, and rhubarb. Bake for 45 minutes at 350.
3. Beat egg whites to make meringue. Add sugar and vanilla. Pour over top of rhubarb layer. Top with coconut. Bake at 400 for 8-10 minutes. Watch this carefully.
