1½ C. Water or clear soup broth (if water is used, add salt to taste and ¾ square of butter. If broth is used, add ½ square butter.)

Directions:
Put water or clear soup broth in a skillet. (If water is used, add salt to taste and ¾ square of butter. If broth is used, add ½ square butter.) Have this boiling hard, then sift enough flour into liquid to make a soft dough. Keep stirring the flour into the liquid and cook until dough is clear-looking and “slips the skillet”. Remove from stove and LET COOL. Put dough in a bowl and beat in 5 eggs, one egg at a time. The more you beat, the lighter the dumplings. Add sprinkle of nutmeg to dough to taste (better if there is a distinct but subtle flavor). Put large saucepan of salted water on stove and bring to rolling boil. Add tablespoon of dough at a time to boiling water and let cook until dumplings are light and fluffy (they will turn over when they are done). Cook several at a time as space in pan allows. DO NOT COVER. When each dumpling is done, spoon into soup for serving.
