2 c. heavy cream
5 egg yolks
1 T. vanilla
½ c. sugar
Brown sugar or whipped cream for topping

1. Whisk together the cream, egg yolks, vanilla, and sugar.

2. Bake in 5 ramekins in a pan of water which comes halfway up the sides of the ramekins. Bake at 275º F until set but still trembling in the center, about an hour. Start watching at 45 minutes.

3. Remove and cool.

4. Finish by adding a topping. You can dust with brown sugar and torch them or you can top with a small dollop of whipped cream.
