3 cans (16 oz.) chick peas (garbanzo beans) drained, reserve liquid from one can.
6 lemons.
1 cup tahini (well stirred)
4-6 cloves minced garlic
olive oil
salt
white pepper
paprika (optional to taste)

In food processor:
- process chick peas until smooth, add garlic and lemon juice until creamy.

- add tahini and continue to process.

- drizzle in olive oil to desired consistency, approximately 1/4 cup.

- at this point, can add reserved liquid until desired texture is reached.

- when mixture is smooth and creamy, pour into serving bowl. drizzle with olive oil or cover with a carpet of minced parsley.

- serve with small triangles of toasted pita bread

This is Greg's maternal grandmother's recipe. The affectionate term for grandmother in Arabic is "Situ".

Can adjust seasoning based on the season. For example, in winter can reduce the amount of lemon and add Cumin.
