¼ c. butter, straight from the fridge or room temp
¼ tsp. salt
1 ¼ c. flour, (or Gluten Free flour blend with xanthan gum)
¼ c. water, added in small increments
1 T. sugar, optional

Directions:
Directions:
1. Wash your hands and get ready to get your hands sandy!

2. Add the butter, salt, optional sugar, and 1 cup of flour to a bowl and mix by hand.

3. Add the remaining 1/4 cup flour in small increments until you get a “damp sand” consistency. It should be mostly crumbly but when you press it together it should stick together.

4. Press the mixture evenly into your pie pan. Place it in the freezer for 30 minutes.

5. Bake at 450º F for 10-12 minutes or until the edges begin to brown slightly.

6. Fill with your favorite pie filling!

NOTES
-Most recipes call for cold butter and cold water. I use a different method where you mix everything by hand and instead of rolling out the dough you press it into your pan directly, then stick it in the freezer before you bake it.
-I make my own Gluten-free flour blend with xanthan gum and the following flours: white rice, brown rice, corn, sorghum, tapioca, potato
