38 mini paper baking cups
1 Tbsp instant espresso coffee powder
¼ cup hot water
½ cup vegetable or canola oil
2 eggs
1 (18.3oz) package fudge brownie mix
1 cup semisweet chocolate morsals
1 cup coarsely chopped walnuts

Directions:
Directions:
1. Heat oven to 375º. Place liners in mini muffin baking pan.

2. Dissolve coffee powder in hot water in a 2 cup glass measuring cup, stirring with a small whisk. Cool slightly, then stir in oil and eggs until blended.

3. Place brownie mix in a large bowl. Stir in coffee mixture until well blended. Stir in chocolate chips and walnuts. Spoon mixture into muffin cups.

4. Bake for 12-14 minutes or until tops are shiny and crusty and centers are set. Transfer to wire racks and cool completely (~20 minutes) then remove from pan.
