Ginger Bread Recipe

2 cup flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp cocoa
1 tsp instant coffee (dissolved in a Tbsp hot water)
1 tsp grounds cinnamon
1/4 tsp ground clove
4 Tbsp unsalted butter, 1/2 inch cubes
2/3 cup dark brown sugar
2/3 cup mild molasses (not blackstrap)
2/3 cup boiling water ( for dissolving coffee(
1 large egg
Decorative sparkling sugar as needed (the sort of large crystal sugar, also
optional)
Preheat oven to 350 degrees.
Grease and flour a 8"x4" baking pan, (2 small 3"x6" work even nicer)
In a bowl whisk together flour, baking soda, salt, ginger, cinnamon and clove. Set aside
in large bowl, combine, butter, brown sugar, molasses, and boiling water. When mixture is lukewarm whisk in egg.
Add dry ingredients to wet ingredients and combine until there are no lumps.
Pour batter into prepared pans.
Bake approx 3035 minutes or until middle feels firm to the touch.
Number of Servings: 1 if your hungry Prep Time: 45 minutes
Personal Notes: This is truly best in the small pans. Serve warm or sliced and heated on a griddle then topped with ice cream!
