1/2 cup unsalted butter
1/2 cup brown sugar tightly packed
1/2 cup molasses
1 large egg
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
3/4 teaspoons baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground ginger
1 1/2 teaspoons cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg

1. Combine butter and sugar in stand mixer and beat until well-creamed
2. Add molasses and beat until combined (mixture may look piecey, this is ok)
3. Stir in egg and vanilla extract
4. In a separate bowl, mix together flour. baking soda, salt and spices
5. With mixer on low speed, gradually add dry ingredients to wet until completely
combined
6. Scrape dough roughly into ball, wrap completely in plastic wrap and refrigerate for at
least three hours or overnight
7. Once dough has chilled, preheat oven to 375º
8. Flour a clean surface and lightly flour the dough as well
9. Use a rolling pin to roll the dough to 1/4" thickness and use a cookie cutter to cut out
shapes. Transfer to a parchment lined cookie sheet and bake for 8-10 minutes
Allow to cool on baking sheet for at least 5 minutes then transfer to a cooling rack to cool completely before decorating
