2 cups oil
3 cups brown sugar
8 eggs separated
2 tsp cinnamon
3 tsp nutmeg
2 tsp salt
2 tsp baking powder
6 cups flour
2 cups canned orange juice
2 cups raisins
9 cups candied mixed fruit
6 cups chopped nuts (prefer pecans)

Mix oil, sugar and egg yolks

Sift together spices, salt, baking powder and 2 cups of flour (reserve rest of four)

add flour mixture and the juice alternately to the 1st mixture

mix fruit, raisins and nuts with the remaining flour - then add to batter

Line pans with brown grocery bags or wrapping paper. will take some time as stiff paper so suggest you fo this step ahead of batter prep

Divide dough into pans evenly. put whole cherries, pecan halves or both in decorative pattern on top of batter

bake at 275º for 2½ - 3 hours PUT PAN OF WATER IN OVEN BOTTOM FOOR THE ENTIRE TIME
