¼ cup sifted flour
3 tablespoon cocoa
5 egg whites
½ teaspoon cream of tartar
1 cup sugar
5 egg yolks
¼ teaspoon salt
1 teaspoon vanilla
1 cup whipping cream, whipped

Chocolate Gloss:
½ cup sugar
1 ½ tablespoons cornstarch
1-oz square unsweetened chocolate
dash salt
½ cup water.
1 ½ tablespoons butter
½ teaspoon vanilla

Directions:
Directions:
Sift 1/2 cup sugar, flour, cocoa, and salt, twice. Beat egg whites with cream of tartar until stiff but not dry; gradually beat in 1/2 cup sugar. Beat egg yolks until thick & lemon colored; add vanilla. Fold in dry ingredients. Carefully fold in beaten egg whites. Spread batter evenly in greased & floured cookie sheet with sides. Bake about 25 minutes at 325º. Immediately turn out onto towel sprinkled with powdered sugar. Roll cake with towel; cool. Unroll; spread with whipped cream. Roll again. Spread with Chocolate Gloss and garnish with toasted sliced almonds.

Chocolate Gloss: Mix sugar, cornstarch; add unsweetened chocolate, salt, and water. Cook & stir until blended and thickened. Remove from heat; add butter and vanilla. Spread while hot.
