Salmon fillet
oil
2 cloves garlic, minced or pressed
seasoned rice vinegar
soy sauce

Directions:

Heat a tablespoon or so of oil in skillet. Place salmon skin side down, cover the skillet, and cook over medium heat for about 2 - 3 minutes. Turn. Add garlic to the pan, stir, and then add about cup each of soy sauce and vinegar. You don't want the garlic to burn, so move quickly at this point to get the liquid into the pan. Turn the heat down to low and let the salmon cook uncovered in the bubbling sauce. While it's cooking, peal off the skin. Depending on the thickness of the salmon, it should be done in 5 - 6 minutes. The sauce will cook down and get a bit thicker. You can always add more soy sauce and vinegar if needed. Serve with rice and pour a bit of sauce over the whole thing. It's also good with a little bit of dried dill (or Pampered Chef Dill Mix) sprinkled on.
