16 oz. lasagna noodles
4 cups (2 lbs.) ricotta cheese
2 cups shredded cheddar cheese
1 cup chopped fresh spinach
½ cup sliced green onion
1 egg, slightly beaten
¼ tsp. black pepper
3 cups (26 oz. jar) spaghetti sauce, divided
Grated parmesan for garnish

Directions:

Cook noodles according to the directions on the package and drain. Lay flat on foil to cool. Heat oven to 350º. In a large bowl, stir together ricotta cheese, cheddar cheese, spinach, green onion, egg, and pepper.

In a 9" X 13" baking dish, spread ⅔ cup of the spaghetti sauce on the bottom.

Take each lasagna noodle and spread about ⅓ cup of the mixture to within 1-inch of the ends; roll up and place seam side down on top of the sauce in the baking dish. When all the noodle bundles are in the dish, cover with the remaining spaghetti sauce. Sprinkle with some parmesan cheese, if desired, and bake for 45 minutes or until hot and bubbly.
