1⅔ cups flour
1⅓ cups sugar
1⅓ tsp. baking soda
dash of salt
1 tsp. pumpkin pie spice
1 slightly beaten egg
⅓ cup oil
¾ can of pumpkin (about 10 oz.)
⅓ cup of nuts (optional)

Directions:

Preheat oven to 325º.

Put dry ingredients into a mixing bowl and stir with mixer. Add wet ingredients and beat until mixed well. Batter is very stiff. Pour into loaf pan and bake for about 75 minutes. Check to see if tester comes out clean. If not, put back in for a few more minutes.

Makes one regular sized loaf or 3 - 4 small loaves. Adjust baking time if making small loaves.

This recipe comes from Wesley's 4th grade teacher, Mrs. Griggs. She found out I was catering and thought I needed some good bread recipes for my breakfast events. Turned out she was right and this is my favorite recipe for Pumpkin Bread. We like it with whipped cream cheese spread on the top.
