Bacon Wrapped Meatloaf Cupcakes Recipe

1 1/2 lbs ground beef
1 cup bread crumbs
1 onion, finely diced
1 egg, lightly beaten
1 1/2 tsp salt
1/2 tsp pepper
1-8 oz can tomato paste
2 tbsp Dijon mustard
1 1/2 tbsp Worcestershire sauce
12 slices bacon
4-6 potatoes
1/4 cup shredded cheese
2 tbsp butter
1/4 cup milk
1/2 tsp salt

Directions:
Preheat oven to 350º
Wrap each slice of bacon around inside edge of cups/muffin pan and set aside
In a large bowl, mix together ground beef, bread crumbs, onion, brown sugar, egg, mustard, tomato paste, Worcestershire sauce and salt

Separate meat and roll it into 12 evenly sized balls and place them in the cupcake pan, with the bacon.

Bake for 1 hour
While it cooks, boil potatoes until soft. Drain and add butter, cheddar cheese, milk, and salt and mash until they are smooth.
Scoop all potato’s into pastry bag or use large ziplock bag with corner cut off
Pipe the mashed potatoes on top of the cooked meat loaf cupcakes once out of oven
Bake the cupcakes with potatoes for another 5 minutes, increasing temperature to 400º
