3 - 15 oz cans of black eyed peas drained
1/2 cup chopped red onions
1/2 cup chopped green pepper
1/2 clove garlic (or more to taste)

Dressing:

1/4 cup vinegar (rice or white)
1/4 cup vegetable oil
1/4 cup sugar
1/2 tsp salt
dash of hot sauce

Directions:

Combine drained peas with onions, peppers and garlic

Combine all dressing ingredients

Pour dressing over vegetables and peas and refrigerate overnight before serving.
