Italian Sauce Recipe

1 large or 2 small/medium onions
8 small cans tomato paste
1 large can tomato puree (or sauce)
1 whole bunch of parsley - chopped
7-10 cloves of garlic
1 green pepper - sliced
crushed hot pepper to taste
1 package Italian sausage and 1 package country style spare ribs
1 handful of salt

Brown all of the meat - remove and set aside
In a large pot:
Sauté the onion and garlic until onion is translucent and garlic is browned
Add Paste and Puree and then twice as much water as each
Add green pepper, salt, crushed pepper and parsley
Bring to a slow boil
Add meat, return to boil and then reduce heat to a simmer for about an hour or until the meat is done.

Prepare the pasta bowl:

Cover the bottom of the dish with sauce. Sprinkle Romano/Pecorino blended grated cheese. Add pasta then cover with sauce. Serve meat separately, and add salad and bread as sides.

Although much debate occurred on the exact amounts of the ingredients, the above should provide a pretty close to perfect sauce for you. Aunt Jo actually used 2.5 times the water as the paste and puree. When using hot sausage you may want to decrease the amount of crushed pepper you put in.
