1 cup yellow cornmeal
1 ½ cup boiling water
1 ½ tablespoons oleo
3 egg yolks
1 cup buttermilk
2 teaspoons sugar
1 teaspoon salt
1 teaspoon baking powder
¼ teaspoon baking soda
3 egg whites

Directions:
Directions:
Measure cornmeal into medium sized bowl; pour boiling water onto cornmeal. Stir until cool to keep free of lumps. Beat in oleo and egg yolks. Stir in buttermilk; blend in sugar, salt, baking powder, & soda. Beat egg whites only until soft peaks form; fold into cornmeal mixture. Turn into greased 2-quart casserole. Bake 40-50 minutes at 375º. Serve hot with butter.
