1 lb. 6oz (660g) Blueberries, Fresh or frozen thawed
4oz Sugar (120g)
0.14oz (2tsp) Lemon zest, grated
1 fl.oz. (30ml) Lemon Juice
⅛ tsp (1g) Salt
1.25oz (37g) Instant Tapioca
¼tsp Cinnamon
0.5oz (15g) Unsalted Butter (cut into small pieces)


1 lb. 1oz (510g) Pie Dough

Directions:

*Pre-heat oven to 375ºF*

1. Combine in a medium bowl the blueberries, sugar, lemon zest, lemon juice, salt, instant tapioca and cinnamon. Let stand for 15 minutes (if using frozen let stand for 45 minutes).

2. Place the filling in the unbaked shell & dot with butter.

3. Cover the top of the pie however you desire preferably with a lattuce top design. Bake for approximately 50 minutes or until crust is golden brown. enjoy!!
