2-3 lb. chuck roast
2 T. olive oil
2 c. beef stock
1 c. red wine
¼ c. flour
2 T. dijon mustard
1 medium onion, chopped
2-3 carrots
2 cloves garlic minced
1 tsp. thyme
salt and pepper
1 pkg. gravy mix

Directions:
Directions:
Salt and pepper roast and brown in oil in skillet. Transfer to slow cooker. Combine stock, flour and mustard in a jar and shake well. Pour into skillet and add remaining ingredients except gravy mix ,and reserve ¾ cup of the broth. Bring to a boil and pour over roast.
Cook on low for 4-5 hours till tender.
1 hr. before it is done combine package of gravy mix and the reserved broth and add to the roast to thicken.
