Ingredients: 2 1/2 cups flour 2 tsp baking powder scant 1/2 tsp salt 1/2 cup softened butter 1/3 cup ricotta cheese 2 tsp grated lemon peel (i do this on a micro plane so it is very fine) 2 eggs 1 tsp vanilla

Directions: |
Directions:in a mixer combine butter and sugar til fluffy add ricotta and lemon peel mix until combined add in eggs one at a time til smooth (make sure to scrape the sides of the bowl so that everything is mixed in) slowly add the flour into the batter
when combine refrigerate cookie dough until ready to bake (at least 1/2 hour but i like to do the dough a day ahead so that it has had time to relax
when ready to bake preheat oven to 350º
line baking sheets with parchment paper (or use ungreased cookie sheets)
flour your hands
roll about a tablespoon of the dough between your hands and place on sheets about two inches apart
bake for about 15 minutes turning trays every five minutes so they bake evenly
even change the rack they are on if your oven has serious hot spots
when the cookies are done (very slightly brown or just turning brown on the edges) remove the sheets and let cool on a rack when just warm to the touch take cookies off the cookie pans and put on racks to cool
bake all cookie before the next step

Ingredients: 2 to 2 1/4 cup confectioner sugar
4-5 tablespoons lemon juice

Directions:mix the confectioner sugar and 4 tablespoons of the lemon juice together
taste the mixture if you like the lemon flavor to be a little stronger add the other tablespoon
if the icing is to thin add a bit more confectioner sugar
when the cookies are completely cooled ice the cookies and decorate with sprinkles
(i use the back of a spoon so that the cookie has just enough icing to hold the sprinkles)
if you have help have one person ice and and the other person can decorate otherwise only ice a few at a time because the icing will set up and you want to make sure your decorations will stay on

i also think you can do this with orange peel and lemon juice
this cookie goes great with coffee even when not iced
