Ingredients: 4 tsp baking soda 2 c. boiling water 2 c. dark raisins 4 c. flour 1 3/4 c. sugar 1/2 tsp salt 4 tbsp oil (vegetable, canola, etc)

Directions: |
Directions:Mix baking soda and water together and pour over raisins (in a large bowl). Let stand overnight without stirring.
Next morning, sift together flour, sugar, and salt. and stir this into raisin mixture with a spoon.
Add oil and continue to mix well with spoon. Batter will be thick.
Grease and flour 3 (1 lb) coffee cans and put 1/3 of batter in each can, leaving top of can open for baking.(Cans will be about 1/2 full)
Bake at 350º for 1/2 hour; reduce oven to 325º and bake another 1/2 hour. Near end of baking cover open cans with foil to prevent excessive browning.
Test breads with long cake tester and when done remove from oven.
Lay cans on their sides and roll to loosen bread. (be sure to do this so you can get the bread out of the can)
Hobo bread is delicious spread with cream cheese. |

Notes: I used to love Aunt Gussie's Hobo bread, but the one time I made it I didn't let the raisins soak overnight and the bread came out pale. By soaking overnight, you get a dark brown bread.
