1 cup chopped onion
2/3 cup diced sweet red pepper
14 ½ -oz can sodium reduced chicken broth
10-oz package frozen whole kernel corn, thawed
1-2 tablespoons canned chopped green chilies, drained
1 ½ cups diced cooked chicken breast
12-oz can skim evaporated milk
¼ teaspoon white pepper
3 tablespoons flour
1 cup potato, peeled and diced
shredded cheddar cheese, optional

Directions:
Directions:
Coat a large Dutch oven with cooking spray; place over medium heat until hot. Add onion and sweet red pepper; saute until tender. Add chicken broth and potato. Bring to a boil. Cover, reduce heat and simmer 10 minutes or until potato is tender. Place flour in a small bowl. Gradually add milk stirring with a wire whisk until blended. Add milk mixture, white pepper, corn, green chilies, and chicken; stir well. Cook over medium heat about 7 minutes or until thickened, stirring constantly. Ladle into individual bowls; sprinkle with cheese if desired.
