1 cup butter
1 cup powdered sugar
1-1/2 tsp pure vanilla
2-1/4 cake flour*
1/4 tsp salt

*If you don't have cake flour, use 2 cups all purpose flour plus 1/4 cup cornstarch put through a sieve or sifter, it works just fine.

Preheat oven to 400º. Line cookie sheets with parchment paper.

Beat butter, powdered sugar and vanilla until fluffy. Measure flour by spooning it into a cup and leveling off or by sifting. Stir flour and salt together. Blend into butter mixture until completely incorporated, but avoid beating too long. Drop by teaspoonfuls onto baking sheets (they do not spread so you can fit quite a few on a pan) or put through a cookie press, if desired. Bake about 8 minutes until set, but not brown. While warm, dip in powdered sugar.

Variations:

Peppermint/Chocolate: Add 8 drops peppermint oil or 1 tsp peppermint extract and a few drops of red or green food coloring to butter mixture before adding flour. After adding flour, stir in 1 cup mini chocolate chips, bake as directed.

Almond/Cherry: Add 1 tsp almond extract with butter mixture, reduce vanilla to 1/2 tsp. Roll teaspoonfuls of dough in finely chopped almonds. Bake as directed. As soon as the cookies come out of the oven lightly press a maraschino cherry into the top of the cookie. (drain the cherries and blot with a paper towel before using.

Orange Meltaways: Add two tsp fresh grated orange zest and a few drops of orange food color with the butter mixture. If desired, add mini chocolate chips too.

Do not use a cookie press if you add chocolate chips to the dough.

These are a really light, buttery cookie, all three versions make nice additions to a Christmas cookie tray.
