Flour cup
Salt tsp
Milk 2 cups

In 1 quart heavy saucepan melt butter; stir in flour and salt. Remove from heat; gradually stir in milk. Cook over medium heat, stirring constantly, until thickened. Cook 2 additional minutes.

Yield: 2 cups

Personal Notes:
I use this sauce as a basic cream sauce for creamed peas or eggs goldenrod. Also, as a base for a cream of mushroom soup or any canned condensed soup. For thinner sauce use 2T Butter and 2T flour and for thicker sauce use 1/2 cup butter and 1/2 cup flour without altering the milk and salt amounts. For cheddar cheese sauce, omit the salt and add 2 cups shredded cheddar cheese to the thin sauce. If desired, add 1 t Worcestershire sauce and a dash of cayenne pepper.
