1/2 cup oil
1 cup applesauce
1 tsp baking soda
1 cup granulated sugar
1/2 cup brown sugar
2 tsp vanilla
1/2 tsp salt
2 tsp cinnamon
2 cups flour
4 eggs
1 small box instant vanilla pudding
1 cup raisins (optional)
1 cup chopped nuts (optional)

Directions:
Directions:
Preheat oven to 325 degrees.
Mix together oil, applesauce, granulated sugar, brown sugar and eggs. Sift together flour, baking soda, cinnamon, and salt. Mix the flour with the applesauce mixture. Mix well. Add raisins and nuts and beat by hand. Pour into 2 greased and floured loaf pans or 1 greased and floured bundt pan. Bake for 70 to 75 minutes.
