2 c whole wheat flour
3 tsp baking powder
1/2 tsp sea salt
4 tbsp cold butter, unsalted and cut into 1/2" cubes
1 tbsp maple syrup
2 large eggs
1-3/4 c buttermilk, plus more if needed to thin the batter
1 tsp; vanilla extract
1 c diced fresh sweet tart apple

For cooking and serving:
Butter for the griddle
Warm maple syrup

Directions:
Directions:
Place the flour, baking powder, sea salt, and cold butter in the bowl of a food processor. Pulse to combine, then run until the mixture resembles a coarse meal. Turn the mix into a mixing bowl.
Whisk together the tablespoon of maple syrup, buttermilk, eggs and vanilla.
Pour the liquid mix into the flour mix. Whisk together just enough to thoroughly moisten all ingredients. All the mix to rest for a few minutes while preparing the griddle and heating the syrup.
Preheat the griddle to 350º Melt a tbsp of butter on the griddle and when the foam subsides, spoon on the batter to a three inch diameter. Generously sprinkle the diced apples onto the pancakes. Cook until bubbles appear on the surface, about 3 minutes, and turn the pancakes once. Cook 3 more minutes. Serve immediately.

Personal Notes:
I never noticed until typing this that you are supposed to sprinkle on the apples. I usually just mix them into the batter. I don't know if it matters or not but they are very tasty regardless of the method you use.
