Rub:
3 tablespoons paprika
1 teaspoon each garlic powder, onion powder, ground cumin and turmeric
1 teaspoon coarsely ground pepper

Directions:
Directions:
Some like to brine their pork chops. I like to skip this step. First, I prime the pork chops by brushing a light layer of oil on both sides.

In a small bowl, mix together the paprika, garlic powder, onion powder, ground cumin, turmeric and ground pepper. Then, using a small handful at a time, rub the blend over the pork chops. Gently pat the spice blend onto the chops until they are evenly covered. Let the meat stand at room temperature to rest 30 minutes.

For a Gas Grill: Turn all burners to high, cover, and heat grill until hot, about 15 minutes. Leave primary burner on high and turn off other burner (s). Clean and oil cooking grate. Place chops, over hot part of grill and cook, uncovered, until well browned on first side, 4 to 6 minutes on each side.

Here are a few ideas for how to customize your rub:

Smoky/Spicy: teaspoon ground chipotle pepper
Smoky: Substitute smoked paprika in place of regular paprika.
Spicy: Add teaspoon cayenne pepper to rub mixture.
Sweet: Add 3 tablespoons brown sugar to rub mixture.
