1.5 lb pot roast, fat trimmed, sliced part way thru
1 packet dry Lipton's onion soup mix
1/2 c beef broth or stock
1 can French Onion soup
3 large carrots sliced
1 medium onion chopped
Minced garlic

(6 medium potatoes optional)

Directions:

1. Cut about 2/3's the way through the pot roast about 3/4 inches
2. Wash all the veggies and chop
3. Layer the bottom of an oiled crockpot with a layer of potato wedges if using
4. Place the pot roast in the center and surround with the remaining vegetables
5. Pour the beef broth over the top, sprinkle with the dry soup mix and pour the french onion soup over everything
6. Cover and cook on low for 7 to 8 hours

I serve this with cauliflower mashed potatoes. In a blender, combine 2 bags of frozen cauliflower riced (steamed in microwave) and blend it with garlic, salt, pepper, and quite a bit of grated parmesan. The kids think it's mashed potatoes.
