Preheat oven º350
1 pkg 8oz lasagna noodles
1 small pkg frozen spinach (thaw, cook for 2 min. And squeeze juices)
¾ portion of cottage cheese from 1 lb container
2 eggs
1 32oz jar of spaghetti sauce
½ cup grated Parmesan cheese
1-1½ lbs grated cheese- use what kind you like: mozzarella or cheddar or Colby Jack (combine cheese if mixing)
Salt and pepper to taste

Cook lasagna noodles.

Mix cooled spinach, cottage cheese, eggs and ¼ cup Parmesan cheese in a bowl. Season with salt and pepper.

In a lasagna or casserole dish start-layering. Start with a small amount of sauce on the bottom of the dish. Layer lasagna noodles, spinach mixture, sauce, cheese. Repeat 2 or 3 more times, ending with cheese on top (depends on your pan). Sprinkle with remaining Parmesan cheese. Add more cheese if you want.

Cover with lid or foil. Bake covered for 45 minutes, remove foil and continue to bake about 15-20 minutes or until cheese is bubbling and browned a little. Let lasagna know rest about 15 minutes before cutting.

Grandma’s original recipe from University of California Berkeley Expanded Food and Nutrition Education Program County of Los Angeles. Original recipe did not call for Parmesan cheese.

When I make it for Christmas, I double the recipe.
