1 Small onion
1 Small red, yellow, and green pepper
1 Can of pineapple cubes
1 tbsp corn starch
2 tbsp ketchup
2 tbsp soy sauce
1 tbsp white vinegar

Directions:
Directions:
Cut chicken in cubes and place in frying pan and cook with oil until brown.

Remove chicken once brown and set aside.

In same frying pan add all ingredients except onion and peppers.

Bring to a slow boil.

Put chicken and peppers into a greased casserole dish.

Pour liquids from frying pan into casserole dish.

Cover dish with foil and bake at 375º for 45 minutes.

Serve over white rice
