2 lbs Chicken cut into bite sized chunks
3 tbsps. olive oil
2 tbsps. balsamic vinegar
2 tsps. paprika
1 tbsp. dried oregano
1 small onion chopped
2 cloves of garlic chopped
1 lemon juiced
red pepper flakes - as much as you want
salt and pepper
2-3 cups of rice, couscous, or orzo
feta cheese
1 red pepper sliced
1 sliced cucumber
sliced olives
skewers to put on grill

sauce:
¼ cup olive oil
1 tbsp. chopped mint
1 cup plain Greek yogurt
½ cup chopped basil
1 lemon juiced
1 tsp cumin
salt
Directions:
Directions:
1. Marinade: in a zip lock back or bowl, combine chicken, olive oil, vinegar, paprika, oregano, garlic, lemon juice, red pepper, pinch of salt and pepper - marinate for at least 20 minutes.

2. Sauce: in a bowl, add yogurt, basil, lemon juice, cumin, mint, pinch of salt and pepper

3. Skewers: put pieces of chicken onto skewers along with red pepper and onion. Throw the skewers on the grill, get a nice char going, and then remove from grill.

4. Rice: make rice or other side dish (orzo or couscous)

5. Serve: Put chicken, rice, yogurt sauce on plate, add cucumber and olive slices.

6. Eat.
