2 sticks butter
2 sticks margarine
shot of cognac or brandy
½ pound farmer's cheese
¼ cup ground almonds
¾ cup sugar
4 cups flour
1 12-ounce jar of raspberry preserves

Mix together (pulsing in a food processor, or mixing by hand in a bowl) 1 stick of butter,1 stick of margarine, 2 cups of flour and all the farmers cheese. Knead the mixture into 2 balls. Wrap in wax paper and refrigerate the dough overnight.

Next Day:
Roll out the dough onto a greased and floured cookie sheet.

Spread the raspberry preserves on top of the dough.

Make crumb topping from the rest of the ingredients. Pulse together 1 stick of butter, 1 stick of margarine, cognac, almonds, sugar and 2 cups of flour in the food processor. Pulse just to form small crumbling balls. Sprinkle crumb mixture over the preserves.

Bake in conventional oven at 350 degrees for 50 minutes to 1 hour. Let cool in pan and then cut into 1 or 2 inch squares.
