2 tbsp. olive oil
1 yellow onion sliced
4 garlic cloves thinly sliced
pinch of red pepper flakes to taste
1 tbsp. cider vinegar
12 oz. thin spaghetti
broken in half
2 lbs. roma or Campari tomatoes chopped. about 8-12 tomatoes
1 tsp kosher salt
1/2 tsp black pepper
2 oz. finely ground parmesan cheese
plus more from serving. ! cup basil leaves for serving

heat oil in large deep iron skillet or Dutch oven. Add onion and cook till soft.stirring occasionally. About 5 minutes. Add the garlic and cook 3-5 in until fragant.Add red pepper flakes and vinegar and stir unil vinegar evaporates.
Add pasta followed by tomatoes and pour 2 1/4cup water over top. Sprinkle with salt and pepper Cover and bring to a boil Simmer for approx. 1o minutes stirring as needed. Uncover and continue cooking until liquid has evaporated just enough to coat your noodles with flavor.5-8 minutes more if still to much liquid.Toss with cheese and basil to melt cheese.
