Ingredients: 150 g of flour 250 ml of milk 1 pinch of salt 25 g of sugar 2 eggs slightly beaten 25 g of non salted butter 4 tbsp of cold water
1. Mix the dry ingredients (Flour, salt and sugar) 2. In the center, add the slightly beaten eggs and incorporate them little by little to the dry ingredients. 3. Slowly pour the milk and the water while whisking to get a smooth liquid dough 4. let the dough rest for 30 minutes (if the dough gets too thick. you can add more water.) 5. heat a small "crêpière" (small pan will do). Brush the bottom with butter each time you are about to make a new crepe. 6. Pour with a ladle some dough and turn the pan to make sure a fine layer of the dough covers the bottom of the pan. 7. Let it cook until the top of the crepe is not runny anymore and the bottom is slightly golden then flip the crepe and cook for an additional 30 secondes.
You can make a stack that everyone will share together! To keep them warm, as the are ready, put them on a plate and keep the stack covered with another plate upside down as you go...
My family loves to eat crêpes with fresh squeezed lemon juice and sugar or off course, Nutella:)

Notes: This recipe is for 6, but my family of 4 always makes twice this quantity.
We love to eat crêpes with fresh squeezed lemon juice and sugar or off course, Nutella:)
We also make savory ones. Same recipe, without the sugar.
