1pound large shrimp peeled and deveined

stir fry veggies of your choice ( green and red peppers, broccoli, onion, carrots, etc )
oil to stir fry

rice or noodles

Sweet and sour sauce:
1TBSP minced fresh ginger
2 cloves of garlic, minced
2/3 cup apricot jam or orange marmalade
1 cup pineapple chopped
3 or 4 green onions, sliced
1 tbsp white or apple cider vinegar. You can also use rice wine vinegar ( very salty ) or pomegranite vinegar

salt and pepper to taste

Add about 1 tbsp of oil to your saute pan or wok
heat until the oil starts to shimmer

Add the shrimp, and cook just until the shrimp starts to turn opaque - remove from pan.
Cover to keep warm

Add more oil if needed, and start your veggie stir fry
Also start heating your rice or noodles, if needed

Meanwhile make the sauce.

When the veggies are ready, add the sauce and put the shrimp back in and heat through

Serve over rice or noodles, garnish with green onion slices, or sesame seeds
