1 lb Beef Sirloin, cut into ¼" strips
4 tbs Flour
½ tsp Salt
4 Tbs Butter
2 oz Mushrooms, sliced (or 3 oz can, drained)
½ cup Onion, chopped
2 cloves Garlic, minced
1 tbs Tomato Paste
1¼ cup Beef Stock, cold (or 10½ oz can condensed beef broth)
1 cup Sour Cream
2 tbs White Wine, dry preferred

Directions:
Directions:
-Combine 1 tbs Flour and Salt.
-Coat Beef strips with flour mixture.
-Head skillet with 2 tbs Butter, brown beef quickly on all sides.
-Add Mushrooms, Onion, and Garlic, cook 3-4 min until onion is softening.
-Remove meat and mushrooms.
-Add remaining Butter, blend remaining flour with drippings to form a roux.
-Add Tomato Paste and stir in Beef Stock.
-Cook and stir over medium heat until thickened and bubbling.
-Return meat and mushrooms to pan.
-Stir in Sour Cream and Wine, cook slowly until heated through.
-Serve over hot buttered noodles.
