2 1/2 cups self rising flour
2 TBS Crisco shorting
1 stick of butter chilled and cut into 1/8 inch slices (8 TBS)
1 1/4 cups of whole fat cold buttermilk (a little more as needed)
1 TBS melted butter for brushing tops

Directions:
Directions:
Preheat oven to 450 degrees

Add shorting to flour breaking up chunks with fingertips until only small, pea size pieces remain. Add butter pieces, a few at a time, to the flour flattening out between your fingers to thin dime size pieces. After doing this, chill in the freezer for 15 mins or 30 in the refrigerator.

Take out of refrigerator and add the buttermilk until just mixed. Transfer the dough on floured surface, roll out and fold into thirds several times. Turn and roll again and fold into thirds adding a sprinkle of flour as needed. Roll to about 1/2 inch thick. Cut into squares or use biscuit cutter. Put on baking sheet and brush tops. Cook for 10 minutes, and check for doneness.

I used to be terrible at making biscuits but this recipe I adapted with trial and error. Making the pieces of butter small and flat and refrigerating the flour and butter mixture are key.
