1 lb of boneless chicken breast- cut into cubes
2 T oil
1 c. green pepper strips ( 2 green and 1/2 red)
1 c carrot strips
1 clove garlic
1 T cornstarch
1/4 soy sauce
1 can 8oz pineapple chunks with juice
3 T vinegar, 3 T brown sugar, 1/2 t ginger,1 1/2c minute rice

Directions:
Directions:
Brown chicken in hot oil in large saucepan. Add peppers, carrots and garlic. Cook in oil 1-2 minutes. Mix cornstarch with soy sauce, Add to pan with pineapple, juices, vinegar, sugar and ginger. Bring to full boil. Meanwhile prepare rice as directed on package. Serve chicken over rice.
