4 pounds pork spareribs
Salt and pepper
1 cup olive oil
Juice of 4 limes
1/2 cup tequila
1/4 cup onions finely chopped
2 tablespoons minced garlic
2 medium jalapeņos seeded and chopped
2 tablespoons cilantro finely chopped

Directions:
Directions:
Season the ribs with salt and pepper. In a small bowl whisk the oil, lime juice, tequila, onions, garlic, jalapeņos and cilantro together. Place ribs meat side down in a glass baking dish. Pour marinade over the ribs coating each side completely. Cover with plastic wrap and refrigerate overnight (at least 12 hours) turning every couple of hours. Remove from refrigerator and bring to room temperature. Preheat grill. Place the ribs meat side down and grill slowly, turning and basting every 15 minutes. Cook for 1 1/2 to 2 hours, or until the ribs are tender.
