2 (10oz.) jars maraschino cherries drained, reserve juice
2 eggs separated
2 c. sugar
2/3 c. butter
2 (1oz.) unsweetened chocolate, melted
3 c. flour
2 t. baking soda
1/2 t salt
Reserved cherry juice plus buttermilk to make 2 cups

Directions:

Heat oven to 350

Cut maraschino cherries in half , mix 2 T flour to coat and set aside

Beat 2 egg whites at high speed until soft peaks form (1 - 2 minutes) Set aside

In another bowl, combine egg yolks, sugar, butter, and chocolate. Mix well, about 2 minutes.

Add flour and dry ingredients alternating with cherry juice. Beat until smooth.

By hand add the egg whites, then fold in cherry halves.

Pour into pan and bake 30- 35 minutes.
Cook 5 minutes before removing from pan.
