3/4 Cup Shortening
1 1/2 Cups Sugar
2 Eggs Beaten
1 Tbsp Vanilla
1Cup Coconut
1/2 Tsp Salt
4 Cups Flour
3/4 Cup Milk
4 Tsp Baking Powder

Directions:
Directions:
Cream Shortening, Vanilla & Sugar together until light & fluffy. Continue to cream while adding well Beaten egg slowly. Add coconut & fold into mixture until evenly distributed. Sift together Flour, Salt & Baking Powder. Add alternatively with Milk to Creamed Mixture until well blended

Drop by teaspoon on greased baking sheet

You can decorate for special occasions with colored sugar sprinkles on top before baking.

Bake at 350 º 12 - 15 minutes

Store in a sealed container once cooled .

Mom made these every year for Christmas & everyone loved them. She would bake many types of cookies & pack in large sealed cans to share with everyone. These cookies get better with time so can start your Christmas cookie baking with these first. She would decorate some with green & red sprinkles while leaving some with the beautiful golden brown coconut to shine !!!
