10 cups ground Zucchini
4 cups onions ground
1 green or red pepper ground
3 tbsp canning salt



2½ cups vinegar
5½ cups sugar
1 tbsp dry mustard
½ tbsp black pepper
1 tbsp turmenic
2 tsp celery seed
2 tsp nutmeg

Zucchini Mix:
Cover with cold water let stand in refrigerator overnight. .Rinse off liquid and drain.

Vinegar Mixture:
Mix the seven ingredients together. Pour over zucchini mixture. Bring to boil, cook for 30 minutes. Put into hot jars and seal with hot lids. Approximiately 5 quarts
