10 lb Pumpkin, scooped out, and washed (inside and out)
1/2 butter
salt and pepper

1 1/2 c. Wild Rice (or regular rice)
2 c. onion, diced
3 c. fresh mushrooms, sliced
1/2 c. butter
1/4 c/ fresh parsley
1 1/2 c. fresh white bread crumbs

2 quarts chicken stock
1 tsp sage
1 tsp salt
1 tsp pepper
3 cups cubed ham, turkey or both

2 cups swiss cheese, grated
1 cup heavy cream

Directions:
Directions:
Scoop out a pumpkin and rub inside with softened butter. Salt and pepper inside of pumpkin. Place pumpkin on a baking sheet with a lip and ¼ in. water. Bake at 350º for 45 min until pumpkin is tender but not overcooked. Lightly Score inside of pumpkin , and pumpkin lid, checkerboard grid style with a sharp knife, but not too deep, to improve size of pumpkin pieces that come off when serving/scraping out pumpkin.

Make 1 ½ cup uncooked rice or wild rice (cook before adding)
Saute diced onion, fresh mushroom, ½ cup butter (can blenderize, if mushrooms not preferred, after cooking and return it to the pan)
Stir in fresh parsley, fresh white bread crumbs

Add chicken stock, sage, salt, pepper
Add cubed ham, turkey or both and rice to soup
Add swiss cheese, then stir in 1 cup heavy cream

Serve from the pumpkin, scraping edges of pumpkin while scooping. Pumpkin will continue to soften and cook as hot soup sits in it.
