1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
3/4 cup butter, room temperature
3/4 cup granulated sugar
3/4 cup packed light-brown sugar
1 large egg plus 2 tablespoon of another egg that has been whisked
1-1/2 teaspoons vanilla extract
1-1/2 cups semisweet chocolate chips
1-1/2 cups old-fashioned rolled oats
1 cup sweetened flake coconut
1 cup chopped pecans

Preheat oven to 350 F. Line baking pans with parchment paper.

In a medium sized bowl mix flour, baking powder, baking soda, cinnamon, and salt. I an 8-quart bowl or standing mixer, beat butter on medium speed until smooth and creamy, about 1 minute. Gradually beat in both sugars; beat to combine, about 2 minutes. Add eggs, one at a time, beating after each egg. Beat in vanilla extract. Stir in flour mixture until just combined. Do not overmix. Add chocolate chips, oats, coconut and pecans and stir.

(Original recipe states to drop 1/4 cup of dough onto cookies sheets 3 inches apart thus creating very large cookies and producing 1-1/2 dozen cookies. But I prefer using the tablespoon-sized scoop). Using a tablespoon cookie-scoop, place each ball of dough 3 inches apart on the prepared baking sheets. Bake for 17 to 19 minutes, rotate baking sheets halfway through baking time, until the edges are lightly brown. Remove cookies from rack to cool.
