Pumpkin Pancakes


Ingredients:

2 eggs, beaten
¼ c. oil
7-8 oz pumpkin puree
½ tsp. Salt
½ c. powdered dry milk
1 T. baking powder
2 T. Sugar
½ tsp. Cinnamon
½ tsp. Nutmeg
¼ tsp. Cloves
⅛ tsp. Ginger
1 ½ c. whole wheat flour (or ½ and ½)
1 ½-1 ¾ c. water

Combine the first 6 Ingredients. Whisk flour and spices together, then add to pumpkin mixture. Add 1 ½ c. water, adding more if needed, to form a thick but slightly runny batter. Serve warm with maple, Apple Cider Syrup, or Caramel Syrup.
 

Apple Cider Syrup


Ingredients:

2 T. cornstarch
¼ tsp. Cinnamon
¼ tsp. Nutmeg
2 cups apple cider (or 2-4 baked and blended apples with cinnamon, cloves, & nutmeg to taste)
2 T. lemon juice
¼ c. butter (melted)

Directions:
If you like sweater syrup you can add sugar to the cornstarch and cinnamon mixture. I think the cider sweetens it enough.

In a saucepan, mix sugar, cornstarch, cinnamon, and nutmeg; stir in apple cider and lemon juice. Cook stirring constantly, until mixture thickens and boils. Boil and stir for 1 min. Remove from heat; stir in butter. Makes 2 ½ cups syrup.
