3 lbs Turtle Meat
3 TBS flour
2 ea cloves garlic Minced
1 ea large can tomato paste
1 ea Rib celery finely chopped
2 ea Green Bell peppers finely chopped
1 cup Sherry wine
¼ tsp Crushed Red Pepper
¼ tsp garlic powder
¼ tsp fresh ground black pepper
4 ea Bay leaves
8 ea Whole cloves
1 TBS Sugar
1 ea Lemon thinly sliced
3 TBS oil
3 ea Medium onion chopped
2 ea Cans of tomatoes
1 bunch green onions
6 ea hard boiled eggs
½ tsp powdered allspice
¼ lb Butter

Directions:
Parboil the turtle meat. Separately Make a brown roux of oil and flour. Add onions, garlic, bell pepper, tomato paste, and tomatoes. Cook slowly 20-30 minutes. Add mixture to turtle meat along with enough boiling water to cover meat and boil down. Add celery green onions, seasonings, wine, bay leaves, cloves, allspice, and sugar. Cook covered over medium heat 30 minutes. Mash egg yolks and chop finely the whites and add to stew. cook slowly for 3 hours adding additional water if it gets too thick 30 minutes before serving add lemon and butter.

I got this recipe from Cochran Georgia cookbook that says it was 120 years old recipe when that book was published. As I write this it would have to 160 years old at least. Also it seems to be derived from a Cajun type of stew so is strange it ended up in this cookbook. Anyway as I have always like the turtle stew and have lost the stews that i grew up with I have included it here.
