4 large sweet potatoes
1 3/4 cups of sugar
3/4 stick of butter
3/4 cup of evaporated milk
1 egg beaten
1 teaspoon pure vanilla

Topping
3/4 cup brown sugar
3/4 stick brown sugar
1 cup chopped pecans
1 1/2 to two cups rice crispies

Directions:
Directions:
Cook sweet potatoes until tender, (I roast in oven the night before). Mash well. Mix in the rest of the ingredients and place in baking dish.

Take the topping ingredients and mix by hand and spread on top of your sweet potatoes.
Bake in a preheated oven at 375 for 35 to 40 minutes. Cover loosely with foil. Last 15 minutes remove foil to crisp top.
